The SP-2000 is Southern Pride’s gas-fired, wood-burning rotisserie smoker designed for high-capacity commercial cooking. Built with 304 series stainless steel construction inside and out, the SP-2000 offers a large cooking surface, durable components, and programmable cook-and-hold control for consistent performance.

Approximate Smoker Capacities

Capacities vary based on the physical shape, weight, and loading method of each product.

  • Pork butts, 8 to 10 lbs each: approximately 220 pieces
  • Baby back ribs, 3 lbs each: approximately 280 pieces
  • Whole chickens, 3 to 4 lbs each: approximately 280 pieces
  • Beef briskets, 12 to 15 lbs each: approximately 80 pieces

  • Mirror image configuration, with the firebox on the left side and the gear motor, burner, and utility connections on the right side
  • Smoke extractor damper, typically used in through-the-wall direct venting applications

Gas

The SP-2000 includes a 1/2-inch gas inlet.

Natural gas:

  • 220,000 BTU
  • Supply line pressure: 4.5 inches W.C. minimum to 10.0 inches W.C. maximum

Propane:

  • 220,000 BTU
  • Supply line pressure: 11.0 inches W.C. minimum to 13.0 inches W.C. maximum

Ventilation

The smoker must be vented according to the Owner’s Manual. Installation must comply with NFPA 96 and all relevant local and national codes, in a manner acceptable to the authority having jurisdiction.

Clearance Requirements

Minimum clearance requirements from combustible material:

  • Back: 18 inches
  • Top: 18 inches
  • Front: 48 inches
  • Firebox door side: 24 inches
  • Gear motor side: 18 inches
  • If provision is made for service access, the gear motor side and back clearance can be reduced to 2 inches. The through-the-wall insulation kit allows for 0-inch clearance on the contact surface with combustibles.
